End grain

End grain cutting boards are aligned so that the fibers of the wood are inside the board and the ends are facing up. This gives them a sort of “self healing” property as the fibers of the wood move out of the way of the knife blade during a cut. These boards are longer-lasting and help keep knife blades sharper
